Maple Butter with Cranberries

Ingredients

 

  • 1/2 cup (125 mL) water
  • 12 oz (350 g) fresh or frozen cranberries
  • 1/2 cup (125 mL) maple syrup
  • 6 tablespoons (90 mL) brown sugar
  • 2 ml (1/2 teaspoon) ground cinnamon
  • 2 ml (1/2 teaspoon) vanilla

Preparation

 

  1. Mix the water and cranberries in a saucepan.
  2. Bring to a boil
  3. Cover, lower heat and simmer 5 minutes or until cranberries burst.
  4. Pass the mixture to the food processor until the preparation is smooth
  5. Mix together the cranberry mixture, maple syrup, brown sugar and cinnamon in the pan.
  6. Bring to a boil
  7. Reduce heat and simmer, uncovered, for 25 minutes or until thickened.
  8. Steam regularly
  9. Add vanilla
  10. Pour into a container and cool, then place in the refrigerator.
