Ingredients
Cheezecake
- 1 cup whipping cream (35% M.F.)
- ½ cup sugar
- 1 cup Philadelphia cream cheese
- Zest from one lemon
- 1 cup of crumbled Graham crackers
- 2 Tbsp. butter
- 1 tsp. vanilla extract
Cranberry drizzle
- 1 cup apricot topping (glaze)
- ½ cup sugar
- 2 cups frozen cranberries
Preparation
Cheezecake
- Beat the whip cream
- Add the ½ cup of sugar and set aside
- Beat the cream cheese to a smooth consistency
- Add the lemon zest and beat quickly
- Set aside
- In another bowl, mix the Graham crackers, butter and vanilla to a sand-like consistency. Place in glasses and pour the cheese mix over it
- Refrigerate
Cranberry drizzle
- In a saucepan, melt the apricot glaze
- Remove from heat
- Add the sugar and cranberries
- Mix well in blender
- Pour over the cheese mix
