Cranberry drizzle cheesecake in a glass

Ingredients

Cheezecake

  • 1 cup whipping cream (35% M.F.)
  • ½ cup sugar
  • 1 cup Philadelphia cream cheese
  • Zest from one lemon
  • 1 cup of crumbled Graham crackers
  • 2 Tbsp. butter
  • 1 tsp. vanilla extract

Cranberry drizzle 

  • 1 cup apricot topping (glaze)
  • ½ cup sugar
  • 2 cups frozen cranberries

Preparation

Cheezecake

  1. Beat the whip cream
  2. Add the ½ cup of sugar and set aside
  3. Beat the cream cheese to a smooth consistency
  4. Add the lemon zest and beat quickly
  5. Set aside
  6. In another bowl, mix the Graham crackers, butter and vanilla to a sand-like consistency. Place in glasses and pour the cheese mix over it
  7. Refrigerate

Cranberry drizzle

  1. In a saucepan, melt the apricot glaze
  2. Remove from heat
  3. Add the sugar and cranberries
  4. Mix well in blender
  5. Pour over the cheese mix
