Chocolate Cranberry Bread

Ingredients

 

  • 1/2 cup (125 ml) softened butter
  • 1 cup (250 ml) sugar
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla
  • 1 cup (250 ml) halved cranberries
  • 3/4 cup (200 ml) milk
  • 2 cups (500 ml) flour
  • 1/3 cup (80 ml) sifted cocoa
  • 1 teaspoon (5 ml) baking powder
  • 1 teaspoon (5 ml) baking soda
  • 1/4 teaspoon (2 ml) salt
  • 1/2 cup (125 ml) chocolate chips
  • 1/2 cup (125 ml) chopped walnuts

Preparation

 

  1. Beat the butter and sugar in a bowl.
  2. Stir in eggs while beating.
  3. Add vanilla, cranberries and milk and stir.
  4. Put the last 7 ingredients in a medium bowl and stir.
  5. Add everything to the dough.
  6. Stir just enough to moisten the dry ingredients.
  7. Pour batter into a greased 22 x 12, 5 x 7, 5 (9 x 5 x 3 in.) loaf pan.
  8. Bake at 350 ° F (175 ° C) for 65 to 70 minutes.
  9. Let stand 10 minutes before unmolding on a rack.
