Cape Cod Cranberry Bread
Ingredients
- 2 cups (500 ml) all-purpose flour
- 1 cup (250 ml) sugar
- 1 ½ teaspoon (7,5 ml) baking powder
- 1/2 teaspoon (2,5 ml) soda
- 1 teaspoon (5 ml) salt
- 1/4 cup (60 ml) shortening
- 3/4 cup (180 ml) orange juice
- 1 tablespoon (15 ml) grated orange peel
- 1 beaten egg
- 1/2 cup (125 ml) chopped walnuts
- 1 to 2 cups (250 to 500 ml) fresh or frozen cranberries
Preparation
- Preheat oven to 350 ° F (180 ° C)
- Sift together the flour, baking powder, soda and salt
- Cut the shortening into the mixture until a granular consistency is obtained.
- Combine orange juice and zest with beaten egg
- Add the wet ingredients to the dry ingredients at one time.
- Mix just enough so that the mixture becomes moist.
- Add the chopped nuts and cranberries
- Pour the mixture into a greased bread pan
- Bake for about 1 hour or until the crust is golden and a toothpick comes out clean.
- Unmold and let cool overnight before slicing.
