Cape Cod Cranberry Bread

Ingredients

 

  • 2 cups (500 ml) all-purpose flour
  • 1 cup (250 ml) sugar
  • 1 ½ teaspoon (7,5 ml) baking powder
  • 1/2 teaspoon (2,5 ml) soda
  • 1 teaspoon (5 ml) salt
  • 1/4 cup (60 ml) shortening
  • 3/4 cup (180 ml) orange juice
  • 1 tablespoon (15 ml) grated orange peel
  • 1 beaten egg
  • 1/2 cup (125 ml) chopped walnuts
  • 1 to 2 cups (250 to 500 ml) fresh or frozen cranberries

Preparation

 

  1. Preheat oven to 350 ° F (180 ° C)
  2. Sift together the flour, baking powder, soda and salt
  3. Cut the shortening into the mixture until a granular consistency is obtained.
  4. Combine orange juice and zest with beaten egg
  5. Add the wet ingredients to the dry ingredients at one time.
  6. Mix just enough so that the mixture becomes moist.
  7. Add the chopped nuts and cranberries
  8. Pour the mixture into a greased bread pan
  9. Bake for about 1 hour or until the crust is golden and a toothpick comes out clean.
  10. Unmold and let cool overnight before slicing.
