Cranberry Spice Cake

Ingredients

 

  • 1/2 cup (125 ml) butter or margarine, softened
  • 1 cup (250 ml) sugar
  • 1/4 cup (60 ml) water
  • 1 cup (250 ml) raisins
  • ½ cup (125 ml) chopped walnuts
  • 1 ¾ cup (430 ml) flour
  • 1 cup (250 ml) cranberry sauce (or jelly)
  • 1/4 teaspoon (1ml) salt
  • 1 teaspoon (5 ml) baking soda
  • 1 teaspoon (5 ml) baking powder
  • 1/2 teaspoon (2 ml) cinnamon
  • 1/2 teaspoon (2 ml) ground clove

Preparation

 

  1. Preheat oven to 180 ° C (350 ° F)
  2. Cream butter and sugar
  3. Add water, raisins and nuts. Mix
  4. Sift together flour, salt, soda, baking powder and spices.
  5. Add the dry ingredients to the butter and sugar mixture, alternating with the cranberry sauce.
  6. Pour into a 10-inch (25 cm) pan
  7. Cook 1 hour at 350 ° F (180 ° C)
  8. Place on a rack to cool
  9. Glaze with a mixture of cane sugar, a little cranberry sauce and a few drops of water.
