Cranberry Spice Cake
Ingredients
- 1/2 cup (125 ml) butter or margarine, softened
- 1 cup (250 ml) sugar
- 1/4 cup (60 ml) water
- 1 cup (250 ml) raisins
- ½ cup (125 ml) chopped walnuts
- 1 ¾ cup (430 ml) flour
- 1 cup (250 ml) cranberry sauce (or jelly)
- 1/4 teaspoon (1ml) salt
- 1 teaspoon (5 ml) baking soda
- 1 teaspoon (5 ml) baking powder
- 1/2 teaspoon (2 ml) cinnamon
- 1/2 teaspoon (2 ml) ground clove
Preparation
- Preheat oven to 180 ° C (350 ° F)
- Cream butter and sugar
- Add water, raisins and nuts. Mix
- Sift together flour, salt, soda, baking powder and spices.
- Add the dry ingredients to the butter and sugar mixture, alternating with the cranberry sauce.
- Pour into a 10-inch (25 cm) pan
- Cook 1 hour at 350 ° F (180 ° C)
- Place on a rack to cool
- Glaze with a mixture of cane sugar, a little cranberry sauce and a few drops of water.
